Crayfish measure

Ingredients

  • 2 cups brown or honey beans, picked and rinsed
  • 1 medium onion, chopped
  • 1/4 cup palm oil
  • 1 tablespoon Wealth Foods ground crayfish
  • 1 to 2 scotch bonnet peppers, blended
  • 1 smoked fish, flaked, optional
  • 1 ripe plantain, diced, optional
  • Seasoning cubes and salt, to taste

Method

  1. 1Boil the beans with half of the onion until soft, adding water as needed.
  2. 2When the beans are tender, stir in palm oil, pepper, seasoning, salt, and the remaining onion.
  3. 3Add Wealth Foods ground crayfish, smoked fish, and plantain if using.
  4. 4Simmer uncovered for 10 to 15 minutes, stirring occasionally until creamy.
  5. 5Mash a small portion of the beans against the pot to thicken the porridge naturally.

Cooking tips

  • Salt the beans after they soften so they cook evenly.
  • The porridge should be creamy, not soupy; simmer a little longer if it is loose.
