Crayfish measure
1 tablespoon Wealth Foods ground crayfish
Ingredients
- 2 cups brown or honey beans, picked and rinsed
- 1 medium onion, chopped
- 1/4 cup palm oil
- 1 tablespoon Wealth Foods ground crayfish
- 1 to 2 scotch bonnet peppers, blended
- 1 smoked fish, flaked, optional
- 1 ripe plantain, diced, optional
- Seasoning cubes and salt, to taste
Method
- 1Boil the beans with half of the onion until soft, adding water as needed.
- 2When the beans are tender, stir in palm oil, pepper, seasoning, salt, and the remaining onion.
- 3Add Wealth Foods ground crayfish, smoked fish, and plantain if using.
- 4Simmer uncovered for 10 to 15 minutes, stirring occasionally until creamy.
- 5Mash a small portion of the beans against the pot to thicken the porridge naturally.
Cooking tips
- Salt the beans after they soften so they cook evenly.
- The porridge should be creamy, not soupy; simmer a little longer if it is loose.
