Bitterleaf Soup
A hearty soup made with well-washed bitterleaf, cocoyam thickener, palm oil, fish, meat, and crayfish.

Crayfish measure
2 tablespoons Wealth Foods ground crayfish
Ingredients
- 2 cups washed bitterleaf
- 6 small cocoyam corms, boiled and pounded, or 2 tablespoons achi
- 700g assorted meat, stockfish, or dry fish
- 1/2 cup palm oil
- 2 tablespoons Wealth Foods ground crayfish
- 1 tablespoon ogiri Igbo, optional
- 2 scotch bonnet peppers, blended
- 3 to 4 cups meat or fish stock
- Seasoning cubes and salt, to taste
Method
- 1Boil the meat and stockfish until tender, then add dry fish if using.
- 2Add palm oil, pepper, ogiri, and Wealth Foods ground crayfish, then simmer for 8 to 10 minutes.
- 3Add pounded cocoyam in small lumps and cook until fully dissolved and the soup thickens.
- 4Stir in the washed bitterleaf and simmer for 5 to 8 minutes.
- 5Taste for salt and seasoning before serving with fufu, garri, semovita, or pounded yam.
Cooking tips
- If the bitterleaf is too sharp, rinse it again before adding it to the pot.
- The soup should be full-bodied, so let the thickener dissolve before adding extra water.
