Crayfish measure

2 tablespoons Wealth Foods ground crayfish

Ingredients

  • 2 cups ground egusi
  • 700g assorted meat, smoked fish, or stockfish
  • 1/2 cup palm oil
  • 2 tablespoons Wealth Foods ground crayfish
  • 1 medium onion, chopped
  • 2 scotch bonnet peppers, blended
  • 3 cups meat or fish stock
  • 2 cups chopped ugu, spinach, or bitterleaf
  • 1 tablespoon iru or ogiri, optional
  • Seasoning cubes and salt, to taste

Method

  1. 1Boil the meat with onion, salt, and seasoning until tender, then keep the stock.
  2. 2Warm palm oil in a pot and fry the onion and pepper for 3 to 4 minutes.
  3. 3Stir the ground egusi with a little water to make a thick paste, then add spoonfuls to the pot.
  4. 4Let the egusi set briefly, then gently stir in stock, meat, fish, and Wealth Foods ground crayfish.
  5. 5Simmer for 15 to 20 minutes until the egusi is cooked and the oil rises slightly.
  6. 6Fold in the greens and cook for 3 to 5 minutes. Adjust salt and serve with swallow, rice, or yam.

Cooking tips

  • Do not overcook the vegetables; they should stay fresh and green.
  • Add stock gradually so the soup stays thick rather than watery.
