Egusi Soup
A rich melon seed soup cooked with palm oil, assorted protein, leafy greens, and ground crayfish for deep Nigerian flavor.

Ingredients
- 2 cups ground egusi
- 700g assorted meat, smoked fish, or stockfish
- 1/2 cup palm oil
- 2 tablespoons Wealth Foods ground crayfish
- 1 medium onion, chopped
- 2 scotch bonnet peppers, blended
- 3 cups meat or fish stock
- 2 cups chopped ugu, spinach, or bitterleaf
- 1 tablespoon iru or ogiri, optional
- Seasoning cubes and salt, to taste
Method
- 1Boil the meat with onion, salt, and seasoning until tender, then keep the stock.
- 2Warm palm oil in a pot and fry the onion and pepper for 3 to 4 minutes.
- 3Stir the ground egusi with a little water to make a thick paste, then add spoonfuls to the pot.
- 4Let the egusi set briefly, then gently stir in stock, meat, fish, and Wealth Foods ground crayfish.
- 5Simmer for 15 to 20 minutes until the egusi is cooked and the oil rises slightly.
- 6Fold in the greens and cook for 3 to 5 minutes. Adjust salt and serve with swallow, rice, or yam.
Cooking tips
- Do not overcook the vegetables; they should stay fresh and green.
- Add stock gradually so the soup stays thick rather than watery.
