Native Rice
A smoky one-pot rice cooked with palm oil, peppers, dry fish, leafy herbs, and ground crayfish.

Crayfish measure
2 tablespoons Wealth Foods ground crayfish
Ingredients
- 2 cups parboiled long-grain rice, rinsed
- 1/3 cup palm oil
- 1 medium onion, chopped
- 2 red bell peppers and 2 scotch bonnet peppers, blended
- 2 tablespoons Wealth Foods ground crayfish
- 1 cup flaked smoked fish or dry fish
- 3 cups stock or water
- 1 cup chopped scent leaf, ugu, or spinach
- Seasoning cubes and salt, to taste
Method
- 1Heat palm oil and fry onion for 2 minutes, then add blended peppers and cook until the sauce reduces.
- 2Stir in Wealth Foods ground crayfish, smoked fish, seasoning, and salt.
- 3Add the rinsed rice and stock, then cover and cook on low heat until the rice is tender.
- 4Add a little water only if needed, keeping the pot covered so the rice steams properly.
- 5Fold in scent leaf or greens at the end and rest the rice for 5 minutes before serving.
Cooking tips
- Low heat gives native rice its soft, smoky one-pot finish.
- Add crayfish before the rice so the flavor seasons the whole pot.
