Crayfish measure

2 tablespoons Wealth Foods ground crayfish

Ingredients

  • 2 cups parboiled long-grain rice, rinsed
  • 1/3 cup palm oil
  • 1 medium onion, chopped
  • 2 red bell peppers and 2 scotch bonnet peppers, blended
  • 2 tablespoons Wealth Foods ground crayfish
  • 1 cup flaked smoked fish or dry fish
  • 3 cups stock or water
  • 1 cup chopped scent leaf, ugu, or spinach
  • Seasoning cubes and salt, to taste

Method

  1. 1Heat palm oil and fry onion for 2 minutes, then add blended peppers and cook until the sauce reduces.
  2. 2Stir in Wealth Foods ground crayfish, smoked fish, seasoning, and salt.
  3. 3Add the rinsed rice and stock, then cover and cook on low heat until the rice is tender.
  4. 4Add a little water only if needed, keeping the pot covered so the rice steams properly.
  5. 5Fold in scent leaf or greens at the end and rest the rice for 5 minutes before serving.

Cooking tips

  • Low heat gives native rice its soft, smoky one-pot finish.
  • Add crayfish before the rice so the flavor seasons the whole pot.
