Nsala Soup
A white pepper soup-style dish thickened with yam and cooked with fish or meat, uziza, uda, and crayfish.

Crayfish measure
1 1/2 tablespoons Wealth Foods ground crayfish
Ingredients
- 1kg catfish, goat meat, or chicken
- 4 small pieces yam, boiled and pounded
- 1 1/2 tablespoons Wealth Foods ground crayfish
- 1 teaspoon ground uziza seed
- 1 uda pod, seeds removed and lightly crushed, optional
- 2 scotch bonnet peppers, blended
- 2 cups stock or water
- A handful of sliced uziza leaves, optional
- Seasoning cubes and salt, to taste
Method
- 1Season the fish or meat with salt, pepper, and seasoning, then cook gently with stock or water.
- 2Add ground uziza, uda, and Wealth Foods ground crayfish.
- 3Drop in small lumps of pounded yam and simmer until the yam dissolves and thickens the soup.
- 4Shake the pot gently if using fish so the pieces do not break.
- 5Add sliced uziza leaves near the end, simmer for 2 minutes, then serve hot.
Cooking tips
- Nsala is traditionally cooked without palm oil.
- Use moderate heat for catfish so the fish stays whole.
