Crayfish measure

1 1/2 tablespoons Wealth Foods ground crayfish

Ingredients

  • 1kg catfish, goat meat, or chicken
  • 4 small pieces yam, boiled and pounded
  • 1 1/2 tablespoons Wealth Foods ground crayfish
  • 1 teaspoon ground uziza seed
  • 1 uda pod, seeds removed and lightly crushed, optional
  • 2 scotch bonnet peppers, blended
  • 2 cups stock or water
  • A handful of sliced uziza leaves, optional
  • Seasoning cubes and salt, to taste

Method

  1. 1Season the fish or meat with salt, pepper, and seasoning, then cook gently with stock or water.
  2. 2Add ground uziza, uda, and Wealth Foods ground crayfish.
  3. 3Drop in small lumps of pounded yam and simmer until the yam dissolves and thickens the soup.
  4. 4Shake the pot gently if using fish so the pieces do not break.
  5. 5Add sliced uziza leaves near the end, simmer for 2 minutes, then serve hot.

Cooking tips

  • Nsala is traditionally cooked without palm oil.
  • Use moderate heat for catfish so the fish stays whole.
